Veggie Quinoa with Salmon and Shrimp

Veggie Quinoa with Salmon and Shrimp

Let's get cooking! This recipe takes about 5 minutes to put together, and 40-45 minutes to cook. Here is what you need

  1. Put the following items in the Rice Cooker 
    1. 1.5-2 cups water or veggie broth 
    2. 1 cup Quinoa rinsed 
    3. Spices 
      1. 1/2 tsp garlic powder 
      2. 1/2 tsp onion powder
      3. 1 tsp dried chives 
      4. 1 tsp dried parsley 
      5. 1/4 tsp red chili flakes
      6. 1/4 tsp smoked paprika 
      7. (if you like things spicery, feel free to add more. Quinoa really sucks up the flavor and can leave things bland).
    4. 1 cup frozen veggies 
  2. The following items go in the steam cooker 
    1. 1 frozen salmon fillet (6oz-8oz)
    2. 7-10 shrimps 
    3. feel free to put salt or pepper on the frozen salmon/shrimp
  3. Put the lid on your rice cooker and turn it on. 
  4. Set a timer for 30-35 minutes. Check on quinoa and salmon. Our rice cooker does not register when quinoa is done, so you might have to make that call. After 35 minutes I cut the salmon in half (since it thaws while it is being steamed) to make sure it got done all the way. Let if cook for another 5-10 minutes and it should be ready! 
  5. Please make sure salmon is cooked all the way through, or to your liking. 
  6. You can sub the frozen salmon or shrimp for other veggies in order to make this vegan (broccoli worked very well).
