Burrito Bowl (Vegan or Shrimp)

Here I am again, making more things in my little rice cooker. This past week we tried two different burrito bowl recipes, using whole grain rice! Here is what we have for you!

1/2 cup of whole grain rice (rinse before putting in rice cooker)
1/2 cup black beans or pinto beans
1/2 cup frozen veggies
1 cup liquid (veggie broth or water)
sprinkle some fajita seasoning on this and stir it up! 

In the steam rack either chop of veggies or put your frozen shrimp in, I like to rinse the frozen shrimp slightly just so the seasoning will stick to them. 

Start the rice cooker (and a timer)! - 20 minutes after starting the rice cooker, quickly take the steam rack off if you can and put the lid back on to the rice. Brown/whole grain rice takes longer to cook than white rice, and we don't want to overcook the veggies or shrimp if we can help it. 

After the shrimp cool for a few minutes, you can take the legs off if you haven't already. 40 minutes after you started the rice cooker check back on your rice. It still might have 10-20 more minutes to go. If the bubbling has calmed down and you just have a little bubbling, put your steam rack back on, and give it a few more minutes. Then taste the rice! If it's to your liking go ahead and have a burrito bowl! If you want it a little softer and all the liquid is gone, add a bit more liquid and give it 5-10 more minutes. 

Once done, feel free to add salsa, sour cream (or greek yogurt) and avocado!
